My question refers to the "preceeding 6 calendar months" statement in 61.57 with regard to instrument currency. Lets say I go out and do six approaches and a hold with a safety pilot in August of last year. It is now February. Am I still current (putting aside the obvious safety concerns, of course)? In other words, do I look back 6 months from now, but include the current month?

Yes, you would be current until the last day of February.

(Look Back Technique)- This example is useful when your approaches/hold are spread out.

Basically, you "look back" over the preceeding 6 calendar month, not including the present month, and count up 6 approaches and a hold under simulated or actual instrument flight conditions.

In this case, look back over your logbook in Jan, Dec, Nov, Oct, Sept, and Aug. If you can count 6 app and a hold under sim or act conditions, you are still current.

Otherwise, you have 6 calendar month grace period to regain currency with a safety pilot. edit - as you probably know, you can not ACT as PIC under IFR during this 6 calendar month grace period until you regain your currency.
