How plug and play is swapping out a GTR 200 for a GTR 205? I know it's the same tray and connectors but is there anything to do in the G3X?
 
Where did you find the information that they use the same tray and connectors?

I did a quick check of the GTR 200 and GTR 205x installation manuals. The GTR 200 uses a 37 pin 2 row connector. The GTR 205x uses a 62 pin 3 row connector. (The x designates the less expensive experimental version of the GTR 205.)

It would not be possible to put a GTR 205 in a GTR 200 tray.
 
I'm wrong then. Maybe Pete at CC said the 200B has same connector.
 
The GTR 200B is the GTR 200 with Bluetooth enabled. There is no connector difference and they would be a direct swap.

The GTR 20 also has the same connector and pinout as the GTR 200 but the GTR 20 is not tray mounted.

Edit to add - I don't see any reason to have the GTR 200B if using a Bluetooth capable headset. A phone or music player can be connected directly to the headphones and still be used if all aircraft power is lost.
