Ok, here's a dumb question:

Let's say I shot approaches in a sim on 11/11, 11/16, and 12/5 (and did holding and tracking). So now what would be the date that my instrument currency would last till? Would it be May 31st??

Calendar month

There are no dumb questions, just dumb answers.

If you were to fly any day in May, you would first ask yourself, "How many approaches have I done this month and then add the preceding 6 months"

So add approaches in May plus,

Nov+ Dec+ Jan+ Feb+ Mar+ Apr

The answer has to be 6 or more for recency. Also, holding and course tracking. If you do not meet at least six approaches, tracking and holding then you need to log it before flying IFR as PIC or SIC as a required crewmember.

If you had more than 6 apchs, tracking and holding between NOV and DEC then you are current until May 31 at least.

If you had 6 or more in DEC then until June 30. Hope that clears it.
 
Yes, whenever you see anything saying month, it is good until the last day of the month. Your Instrument currency, Pitot/Static checks, Annuals, etc.
