If you're going to have her pay the rental costs only, you may ask the flight school if you could just rent the plane and give the instruction. Their insurance is going to be the deciding factor. They may want you "on the payroll" in order to be able to sit right seat and give instruction. Since that will most likely be the case, I'd do exactly what you are thinking of - get hired on for a month.
 
Your best bet is to sit down with the owner/manager of the FBO and ask. If if doesn't work with them, ask for recommendations about places where it might.

Things can be very different from place to place and from FBO to FBO. In some parts of the country, the standard is that CFIs are employees of the flight school/FBO. In others, CFIs are usually treated as independents. In either case, there are insurance issues.

For example, here in the Denver area, the "normal" treatment of CFIs is as independents. Even so, whether you are able to teach at a particular school, whether the FBO or you have to provide insurance, etc, whether an FBO's insurance limits the number of CFIs it can have, etc, varies from school to school on one airport, never mind between airports.
 
I did exactly that last summer and they did a 1099 for me. It was all a fairly simple process and the company was glad to make a thousand bucks off of me... I'd at least ask. I also had a previous renter-relationship with them, so that made it easier.
