I was talking to a CFI based at my FBO about doing my CFI training with him in his 172, and he said it had to be done in a complex aircraft. I didn't think that was true, can anyone clear this up for me?

The training can be done in any aircraft although I've never heard of a checkride being taken in anything other than a complex aircraft! The basic CFI rating applies to private and commercial training. I believe this is why you need the complex aircraft for the checkride. Could be wrong though....

You can do your CFI single engine in a non-complex airplane if you do your multi-engine CFI first. Keep in mind that you can do any CFI rating as your initial. I own a Piper Warrior and did my CFII as the initial, next did the MEI at ATP in a Seminole and was able to do the CFI single engine add-on in my Warrior. If you plan to get all of your CFI ratings in a short time anyway this can be a good way to go about it.

I agree, that's what I was told as well.

CFI-ASE PTS states "A complex airplane must be furnished for the performance of takeoff and landing maneuvers, and appropriate emergency procedures." Hope this helps.

Just to expand a little, the required maneuvers CAN be performed in a non-complex aircraft if desired. Could be helpful if uncomfortable performing maneuvers in a complex. Best of Luck
