There seem to be countless 'van freight operators in the states but none in Europe. Why is that? Is it because they have a good rail and road freight hauling system and rely on much older and bigger equipment that needs to be taken by air?

It's because the JAA doesn't allow commercial Single Engine IFR operations. There are a few exemptions (Cargo only in some countries, domestic operations ec.), but generally that's the status.
