With that being said, since I'm 28.5, and many guys are scheduled for UPT in 07, should I even bother? I'll be pushing it. I'm in the very beginning of the whole process - I haven't even taken the AFOQT yet.

I'll be 28 in a couple weeks and will be meeting the September rated-only board. You can apply at 29 providing you've got a PPL and a Flying Class 1 physical complete. As stated above you have to be in UPT prior to turning 30. You can turn 30 the day after it starts, but you gotta enter prior to.

You need the AFOQT, BAT, 5 letters of recommendation, and if you're meeting the board at 29 you need a FC1 physical, otherwise just a MEPS physical.
 
You could still make it, but you are definitely running out of time. Take the AFOQT & BAT asap, get your forms/resume started, and get your physical done. If you are selected on the next board, you should be ready for a no-notice class date for OTS.

The MEPS physical (aka DODMERB) is a basic qualification for military service. It is required prior to enlistment or commissioning. The IFC physical (initial flight class I for pilots) is more involved and qualifies you for flight duties.

When I was a Tweet IP, I did see some older trainees, but the ones I saw were Air National Guard Navigators on the KC-135 who received age waivers to go to Pilot Training. This was granted due to the Pacer Craig (FMS Installation) Mod to the KC-135 and the phasing out of KC-135 Navigators. In general, everything Jafar said is right on.
