What records/information specifically can a company request from your current employer?

I ask because this jetBlue letter from my interview yesterday says, "...training records and other documentation from past and current employers".

I don't have anything to hide, but my company likes to verbally warn pilots for calling off sick 4 times in a year and then leave a letter in their file.

I don't want anything to mess up my chances because I work for scumbags.

First of all , good luck to you with JB.

The kind of stuff they will have access to is PRIA documents (training records, drug tests, and any actual disciplinary actions that were taken against you). I had a similar concern about sick calls, but this is not something that will be an issue unless they actually disciplined you for it, not just threatened you. Plus any criminal charges, and your driving records. They may also run a credit check, some do. I am not sure about JB if they do or not. I should know, but I don't:)

If you were honest about any issues that may arise, or don't have any, you should be cool.

Are you sure of this, I believe that's confidential, and if used to negate a new hire, a cheap lawyer could get quite a summary for them.
